I'm not an expert on this, but I think you have to go to the machine where
your Daisy instance is running, and navigate to the
\daisywikidata\books\publicationtypes\<type>\html-to-xslfo.xsl file. In
that file, locate the various settings for page-height and page-width. I
have not tested this, but I figure that you would want:

page-height="17in"
page-width="11in"
......

Hi,
Using Daisy 2.1, when I publish a book, the pages of the PDF output are
sized at 11 x 17 instead of 8.5 x 11. I searched through the Daisy
documentation for a setting that controls this, but had no luck. I also
don't see this in the list of publication settings when defining a Book
Document. How do I control the height and width for PDF book pages?
