[daisy] Excluding fields from variants

Daisy does not have document-level fields (what you call 'static'
fields). If you want to set a field for all variants of a document in
one go you can use a document task. (Sorry if this is not helpful, I do
not really understand your problem - what do you mean by 'comment out
this field'?)
