Yes you can create a new Document called "Folder". But instead of a
Multivalue Field i would recommend that you use Document Links. 

So either a folder can reference to all its documents
or
a document can reference to its folder.
or both.

That way a Document can even be "member" of more than one folder, if you
ever feel the need for that.
